Ingredients

1 Lb. Almond Bark
1 Tub Candied Green Cherries
1 Tub Candied Red Cherries
Chopped Pineapple
2 Cups Of Walnuts

Preparation

Melt Down Almond Bark
Add Chopped Candied Fruit
Mix Together
Pour Out On Waxed Paper
Cool
Break Into Pieces




Christmas Cashew Brittle

Ingredients

2 Cups Sugar
1/2 Cup Water
1 Cup Corn Syrup
1 Cup Butter
1 Tsp. Baking Soda
2 Cups Unsalted Cashew Halves

Preparation

In A Large Saucepan, Combine The Sugar, Water And Corn Syrup
Cook Over Medium-Low Heat Until The Sugar Is Dissolved And Stir In The Butter
Bring To A Gentle Boil Over Medium Heat, Stirring Constantly
Cook And Stir Until A Candy Thermometer Reads 280
Stir In The Nuts
Continue To Cook Until A Candy Thermometer Reaches 300
Remove From Heat And Quickly Stir In The Baking Soda
Pour The Mixture Onto A Large Buttered Cookie Sheet
Use A Spatula To Stretch And Spread A Thin Layer Over The Pan
Let The Mixture Harden For A Few Minutes
Remove From The Pan
Break Into Pieces With The Handle Of A Heavy Table Knife
You Can Also Use A Small, Clean Hammer
Store In An Airtight Container At Room Temperature




Christmas Cherry Opera Fudge

Ingredients

3 Tbsp. Butter Or Margarine
3 Tbsp. Milk
1 Pkg. Betty Crocker's Creamy White Frosting Mix
1/2 Cups Chopped Nuts
1/2 Cups Candied Cherry Halves

Preparation

Butter Loaf Pan, 9 x 5 x 3 Inches
In Top Of Double Boiler, Melt Butter In Milk
Stir In Frosting Mix (Dry) Until Smooth
Heat Over Rapid Boiling Water 5 Minutes, Stirring Occasionally

Stir In Nuts And Cherries
Spread Mixture Evenly In Pan
Let Stand Until Firm
Cut Into 1 Inch Squares
Makes About 32 Squares)




Christmas Divinity Fudge

Ingredients

2 Cups Sugar
1/2 Cup Water
1/4 Cup Light Corn Syrup
1/8 Tsp. Salt
2 Egg Whites
1 Tsp. Vanilla
1/4 Tsp. Almond Extract
1/2 Cup Candied Cherries-Halved
1/4 Cup Candied Citron

Preparation

Heat Sugar, Water, Syrup And Salt
Stir Until Sugar Is Dissolved
Boil To 255 Degrees Fahrenheit
In Large Bowl Beat Egg Whites Until Stiff But Not Dry
Pour The Syrup Mixture Into Them
Beat With A Whisk Until Mixture Holds Up In Peaks
Add Vanilla, Almond Extract And Fruits
Pour Into Greased 8 Inch Square Pan
Or Drop From The Tip Of A Spoon Onto Waxed Paper
Remove Candy From Pan Before Cutting
Makes About 1 Lbs




Christmas Hard Candy

Ingredients

4 Cups Sugar
1 Cup Karo Syrup
1 Cup Water
2 Tsp. Oil Of Cinnamon
Red Or Green Food Coloring
Powdered Sugar

Preparation

Mix First 3 Ingredients
Boil To Hard Cracker Stage, 300 Degrees
Add Oil Of Cinnamon And Food Coloring
Pour Into Foiled Lined Cookie Sheet
Sprinkle Powdered Sugar Over The Candy While Its Still Warm
Break Candy Into Small Pieces When It Is Cool Enough To Handle




Christmas Peanut Brittle

Ingredients

1 Cup Sugar
1/2 Cup White Corn Syrup
1 Cup Roasted Salted Peanuts
1 Tbsp. Butter
1 Tsp. Vanilla
1 Tsp. Baking Soda

Preparation

In A 1 1/2 Quart Casserole, Stir Sugar And Corn Syrup Together
Microwave On Full Power For 4 Minutes
Add Peanuts And Stir
Microwave On Full Power For 3 To 5 Minutes Or Until Lightly Brown
Add Butter And Vanilla And Stir To Blend Well
Microwave On Full Power For 1 To 2 Minutes
Add Baking Soda And Stir Until Light And Foamy
Spread On A Buttered Baking Sheet
After Candy Hardens, Break It Into Pieces
Store In An Air Tight Container




Christmas Rice Krispies Candy

Ingredients

2 Cups Rice Krispies
2 Cups Of Small Colored Marshmallows
2 Cups Dry Roasted Peanuts
2 Cups Captain Crunch With Peanut Butter
1 3/4 Lb. White Chocolate (Almond Bark)

Preparation

Melt White Chocolate Over Water In Double Boiler And Mix All Together
Drop By Spoonful Onto Waxed Paper




Christmas Rum Balls

Ingredients

2 Tbsp. Cocoa
Confectioner's Sugar
2 1/2 Cups Finely Crushed Vanilla Wafers
1 Cup Finely Chopped Pecans Or Walnuts
3 Tbsp. Light Corn Syrup
1/4 Cup Rum Or Bourbon

Preparation

Into A Large Bowl, Sift The Cocoa And 1 Cup Of Confectioner's Sugar
Mix In Remaining Ingredients
Form The Mixture Into 1-Inch Balls With Your Hands
Sprinkle About 1-Cup Confectioner's Sugar On A Plate
Roll The Rum Balls In The Confectioner's Sugar To Coat Them

Store In A Tin For At Least 1 Week Before Giving Them Away
These Cookies Will Mellow With Age And Will Keep Up To One Month
They Can Also Be Wrapped In Plastic Wrap Or Foil

Ingredients

3 Cups Sugar
3/4 Cups Light Corn Syrup
3/4 Cups Water
2 Egg Whites, Stiffly Beaten
1 (3 Oz.) Packgage Strawberry Jello
1 Cup Of Chopped Nuts (Optional)
1/2 Cups Flaked Coconut (Optional)

Preparation

Combine Sugar, Syrup And Water
Bring To A Boil, Stirring Constantly
Then Cook Without Stirring To 260 Degrees On Candy Thermometer
Combine Beaten Egg Whites And Jello
Beat Until Mixture Forms Peaks
Pour Hot Syrup In A Thin Stream Into Egg Whites, Beating Constantly
Beat Until Candy Loses Its Gloss And Holds Its Shape
Fold In Nuts And Coconut
Drop By Spoonful Onto Wax Paper
